Southwest-Inspired Potato Salad for a Crowd Recipe

Summer is the time for the ubiquitous potato salad. Now, don’t get me wrong. I LOVE potato salad. Especially my mom’s; she makes it the best.

But you know how it is when you show up to a BBQ, and there are about 10 different potato salads that are all remarkably similar. Here’s a unique spin on the typical, with Southwest flavors. I’ve also lightened it by using yogurt in place of some of the mayonnaise.

Southwest-Inspired Potato Salad for a Crowd

5 pounds red potatoes
1 cup plain yogurt
1 cup mayonnaise
2 tablespoons lime juice
2-3 chipotle peppers in adobo, finely chopped
1/4 cup cilantro, finely chopped
5 slices bacon, cooked crisp and crumbled

1. Chop potatoes into bite-size pieces. Cook in boiling water until tender.
2. Let potatoes cool slightly.
3. Mix yogurt, mayonnaise, lime juice, chipotle peppers, cilantro, and bacon together.
4. Toss sauce with potatoes until thoroughly mixed. 

I’ve made this salad for a few get-togethers, and it’s such a fun and unique alternative to the usual potato salad. The smoky flavors of the bacon and peppers really kick it up a notch, while the yogurt lends a delicious tang.

    That looks so yummy!!Thank you for your touching comment. I've been where your sister is. I also require medication, and for a long long time didn't take it. It takes a long time to accept the fact of medication. I'll certainly be praying for you & your sister!
